Blending is the coffee industry's default. We chose a different path.

Every coffee we serve comes from one specific farm, one harvest, one moment when conditions aligned perfectly. This means our menu changes. Some call this inconsistency. We call it transparency.

You know exactly where your coffee comes from. Nothing is hidden. Nothing is diluted. The farmer's work isn't blended away.

If a coffee isn't exceptional as a single origin, we don't serve it.

Most coffees are good. Many are very good.

We serve only the ones that make us pause mid-sip and immediately want to taste again — the ones with enough complexity, clarity, and character to stand alone.

We taste dozens of samples. We say no constantly. Our selection is small.
